I refuse to buy store-bought salad dressing. Not only is homemade dressing free from all those unpronounceable additives, but it is 100% tastier. Another plus is that the left over rarely goes to waste. I can use it as a marinade or a sauce.
· 1 jalapeno, seeded and chopped
· 3 cloves of garlic
· 3/4 tsp grated fresh ginger root
· 1 lime, juice
· 1/3 cup honey
· 2 tsp balsamic vinegar
· 1/4 packed fresh cilantro
· 1/2 cup extra, virgin olive oil
· 1/2 tsp salt
If you have a Vitamix, throw all ingredients in and blend. If you have a food process or other blender, place the jalapeno pepper, garlic and ginger in first and pulse until finely chopped. Pour in lime juice, honey, salt and cilantro; pulse a few times to blend. Turn the food processor/blender on, and slowly drizzle in the olive oil until fully mixed. Season with additional salt if needed.
