Raw kale can be a bit boring by itself, so I decided to dress it up a bit with some other tasty raw ingredients. This spread is great for sandwiches/wraps, to top on a fish fillet, mix in with a veggie and quinoa medley, etc. Here, I added it to some baked salmon fillets. Delicious!


In a food processor or blender, process all the ingredients. I used a Vitamix, and mixed the spread until all ingredients were finely minced. The spread should not be smooth, so don’t blow out your appliance’s motor trying to reach that consistency. Add salt to taste (optional).


  • 2 cups of kale, chopped
  • 1/2 cup of toasted pine nuts
  • 2 scallions (bulb and stems), chopped
  • 2 cloves of garlic, chopped
  • 1 lemon, juice
  • 1/2 avocado
  • Salt to taste (optional)
